I love to make my own granola from scratch. Once I realized how easy it was and how much room there was to experiment with different flavors, seeds, nuts, sugars, flours, etc I was hooked.
Why buy the store bought when you can make an enormous batch at home with minimal effort? It just required mixing the dry ingredients together, the wet ingredients together and then combining the two bowls. Pop into the oven for 20 minutes and ta-da your perfect breakfast or snack is ready. Doesn’t get much simpler than that! This coconut almond granola in particular literally only uses 8 ingredients and 2 bowls. That is all you need. For the dry ingredients mix up gluten free oats, sliced almonds, coconut flakes and rice flour. For the wet ingredients whisk together peanut butter, with coconut oil, agave and coconut milk. Combine the two and bake.
The result? An irresistible ever so slightly sweet and insanely crunchy coconut almond granola that you will not be able to get enough of.
While I love to waltz right by the kitchen and dip my hand into this coconut almond granola jar for a mid morning, mid afternoon, mid evening snack, most of the time I love the granola as a topping for something with a bit more substance.
Something velvety, smooth and creamy. Something like yogurt.
Unfortunately upon becoming an adult, my body has alerted me to the fun fact that dairy and I are actually not the best of friends. While I love to deny this, I do have to admit that realistically I feel better when I am not eating dairy (and I do actually believe that a dairy free diet is better for you).
Is this some sort lactose intolerance or just my body changing over time? Who knows, but as you can see from the recipes on my blog, over the last couple years almost every single recipe has been dairy free.
I just feel better going dairy free, so while I do like to sneak a bit of cheese here and there (and yes I do eat pizza occasionally), when it comes to yogurt I kind of had to give it up. Which really was a shame because let’s face it, granola and yogurt are made to go hand in hand together.

- 4cupsgluten free oats
- 2cupssliced almonds
- 2cupscoconut flakes
- 3tablespoonsrice flour
- 1/3cuppeanut butter
- 1/3cupmelted coconut oil
- 4tablespoonsagave
- 1/3cuplight coconut milk
- In a large bowl combine oats, almonds, coconut flakes and flour. Mix.
- In a small bowl combine peanut butter, coconut oil, agave and coconut milk. Whisk until smooth.
- Place mix on parchment lined baking sheets in single layer.
- Bake 20-25 minutes, stirring halfway, and keeping an eye on it so it does not burn.

The Silk brand has been a long standing reputable health foods brand for more than a decade. Owned by Whitewave Foods, who own other brands such as Horizon Milk, Land O Lakes Butter, Alpro, Earthbound Farm and International Delight. They were practically the first to introduce soy milk to the mainstream and continue to innovate in the non dairy vegan food market. I was a huge fan of their products, but since they were purchased by WhiteWave a lot of things have changed. Even though Whitewave does a lot of good things for the environment there are still some big corporate entrenched in the way they do business vs. a smaller natural organic brand. Unfortunately, their has been some notions that the company may source non organic soy beans from outside of the USA. I try to support USA sourced product vs. non USA sourced. This just makes me feel better and I'm supporting my country! Also, they do not offer a plain flavored or Organic. In my mind buying organic is the only way to go! Non-GMO would be nice as well.
